​​​​Behind the Scenes of Aroma, a lecture given to MA students in The Department of Hotel and Tourism Management at the Guilford Glazer Faculty of Business and Management GGFBM, Ben-Gurion University of the Negev, was held on January 4, 2018. The guest speaker was Michal Dafni Ben Arush, Aroma Network Dietitian for 12 years. 

The lecture dealt mainly with the issues of nutritional labeling of the chain's dishes: Should the dishes be labelled as healthy? Should the health value of portions be increased at the expense of taste? The lecturer explained the decision-making processes that led the well-known network to decide to remove the healthy labeling on special portions. "Healthy for whom?" She noted. What is healthy for one may not be healthy for others. A so-called health-dish may contain unhealthy ingredients for a person with diabetes, or a person with high blood pressure, or for a person sensitive to gluten. 

The decision to remove the healthy labelling expresses one issue that illustrates the far-reaching consequences of complex and broad management. In the wake of the decision, for example, cooperation between the chain and other companies were formed, such as Weight Watchers, Wingate, the National Program to Promote Active, Healthy Lifestyle (Efshari Barie), the Israel Diabetes Association, and more. The issue also demonstrated how the decisions were carried out in lieu of a variety of changing trends. 

Prof. Yaniv Poria, Chair of the Department of Hotel Management and Tourism in the GGFBM and BGU Eilat Campus Academic Director, emphasizes that graduates of the department can be found in the management fields of industry, tourism, hotels, food and beverage industry,  conferences and events as well as various enterprises in these fields.

The Department of Hotel and Tourism Management is a core part of the Guilford Glazer Faculty of Business and Management since its establishment at Ben-Gurion University of the Negev.
